Language Bites

Tenderize, wash thoroughly, drain, dry, cut and  place on rack, turn, cook slowly, grate garlic, squeeze juice, grate zest, cut parsley, pour /drizzle olive oil,  marinade, rest,  toss and turn.

What do I need?

  • About 2kg Octopus. Ask the fishmonger to give you a tenderized one.
  • Chopped parsley
  • 2 fresh lemons for juice and zest
  • Extra Virgin Olive oil
  • Oregano

7 Simple steps

  1. Wash the tenderized octopus under running water.
  2. Drain and dry.
  3. Cut tentacles.
  4. Place on grilling rack about 5 inches from woodfire heat.
  5. Grill the octopus quickly to avoid it drying inside.
  6. Marinade: place the olive oil, chopped parsley, oregano, lemon juice and zest in a bowl and add the octopus. Toss, turn and allow to absorb the flavours and rest for 30 minutes. Drizzle extra virgin olive oil before serving.

Extra tip: add hot fresh chilly to the marinade.
